The Theory behind the MRS Kit We learned that small barrels have a higher surface to volume ratio than larger barrels. This means that more of the rye spirits comes into contact with the sides of the barrel and obtains flavor transfer more quickly. How quickly? A small 2 gallon barrel will impart flavor to the rye spirits in three months, whereas a 50 gallon barrel will need one year to impart a similar flavor. We suggest that after three months of aging you begin to take monthly samples with a whiskey thief, until your desired perfection is reached. Of course the trick is to have some whiskey left in your barrel when perfection arrives; try not to over sample with your friends. Your finished rye spirits will be one of a kind. This is because you choose how long to age it and also because no two barrels impart the same exact flavor. Each barrel is unique which is why you'd want to blend all of your barrels together to achieve continuity in flavor; if you were in the business of making whiskey. You can reuse your barrel up to two more times, knowing that each time your MRS will be a little different and that the sampling process becomes more necessary to achieve perfection.
